Italian Meringue
Macaron shells made with an Italian meringue (sugar syrup boiled to 118°C).
Ingredients
| — | almond flour |
| — | powdered sugar |
| — | egg whites |
| — | crystal sugar |
| — | water |
Instructions
- Mix the flour and powdered sugar. Add the first half of the egg whites and stir to a homogeneous mixture.
- In a small bowl combine the water and crystal sugar, bring to a boil to 118°C. Meanwhile put the second half of the whites in a bowl. When the sugar reaches 115°C, start beating the whites on medium speed.
- Pour the sugar at 118°C into the beaten whites. Beat until the mixture reaches 50°C and a nice meringue forms. Pour the meringue into the flour mixture and stir until homogenized.
- Shape the macarons and bake.
