Izvara (Homemade Curd Cheese)

* measures and quantities. Izvara can be made from slightly spoiled fresh milk or from boiled curdled milk. Regardless of which method you use to make izvara, you can eat it immediately or put it in the freezer or fridge for longer storage.

Ingredients

1 лfresh milk, curdled
0.5 к.л.salt
1 ч.л.vinegar
1 с.л.yogurt

Instructions

Method (with yogurt): After the milk boils and curdles, stir in a spoon of yogurt, the salt and the vinegar. Leave a few more seconds on the stove until it fully curdles, then remove from the heat. Let the mixture cool completely and store in the fridge. After 2 hours strain through cheesecloth. The result is a very tasty, rich izvara. You can keep the whey and use it for making bread, buns, pancakes.

First method: As everyone knows, izvara is made from milk or its leftovers. For the first recipe you need two liters of fresh milk and one teaspoon of citric acid or 3 tablespoons of lemon juice. Boil the milk in a suitable pot and, once it comes to a boil, curdle it with the citric acid or lemon juice. Leave it to simmer for one or two minutes until fully curdled and remove from the heat. Once cooled, strain and your izvara is ready. Not difficult, is it?

Second method: Boil one liter of fresh milk and, once it comes to a boil, curdle it with a tub of yogurt. Again leave it to cool, then strain and, if desired, sweeten or salt the resulting izvara.

Third method: If you are among the people who make their own cheese, you probably know that after curdling the milk, whey separates from it. Put the separated whey in a pot and place on the stove to boil. Once it boils, wait for the liquid to curdle and turn into flakes, then remove from the heat. Very often this process raises something like a white cap on the surface of the pot. Cool and strain and again you are ready — most likely you will enjoy homemade izvara.

  • The whey is heated to about 90 degrees, i.e. without boiling, after which the coagulated mass is strained and pressed.

Fourth method: There is no one who hasn't had their milk turn sour. But few of us know that even though the milk has soured, it can be used to make homemade izvara. To do this, put the milk in a suitable vessel and place on the stove to boil; shortly after it boils it will curdle and small pieces will begin to float in it. As you can guess, the result is again homemade, tasty izvara.
