
Jamaican Ginger and Coconut Soup
Flavors of Jamaica. A smooth pureed soup with ginger, coconut cream and a hint of allspice and Tabasco.

Ingredients
| 1 tbsp | 15 ml | Oil |
| 1 | Large onion | |
| 2 cloves | Garlic | |
| 1 | Ginger, 5 cm (2") piece | |
| 250 ml | Coconut cream | |
| 1 liter | Vegetable stock (homemade or from a cube) | |
| 1/4 tsp | 1.3 ml | Allspice |
| 1 tsp | 5 ml | Soy sauce |
| a dash | Tabasco (optional) | |
| — | Salt and freshly ground pepper | |
| — | Green onion (garnish) | |
| — | Paprika (garnish) |
Instructions
- Heat the oil in a large frying pan over low heat and fry the onion, garlic and ginger until soft.
- Add the remaining ingredients except the coconut cream and stir well.
- Bring to the boil, cover and simmer for 15 minutes, stirring occasionally.
- Stir in the coconut cream and mix well.
- Leave to cool, then puree until smooth.
- Reheat to serve and garnish with slices of red or spring onion and a sprinkle of paprika.
