
Jamaican Jerk Pulled Pork

| 0.75 tsp | 3.8 ml | cayenne pepper |
| 0.75 tsp | 3.8 ml | ground allspice |
| 0.25 tsp | 1.3 ml | ground nutmeg |
| 0.25 tsp | 1.3 ml | ground cinnamon |
| 1 tbsp | 15 ml | olive oil |
| 3 pounds | 1.4 kg | pork shoulder |
| 0.5 cup | 120 ml | beef stock |

- Mix onion powder, sea salt, thyme, black pepper, cayenne pepper, allspice, sugar, nutmeg, and cinnamon together in a small bowl until seasoning mixture is well combined.
- Rub olive oil onto pork shoulder to coat; season with seasoning mixture.
- Heat pressure cooker set to Sauté on Normal.
- Cook pork in inner steel pot of pressure cooker until browned completely, about 5 minutes.
- Pour beef stock into the pot.
- Lock pressure cooker lid in place and set steam vent to Sealing. Select Pressure Cook (Manual) and cook for 45 minutes on High pressure. Allow pressure to release naturally for 15 minutes, then set steam vent to Venting to quick-release remaining pressure.
- Transfer pork to a cutting board to cool slightly before shredding with two forks.
Mealthy Tip: Jerk seasoning gets its signature flavor from the blend of allspice and spicy peppers but every cook can create their own personal blend. Other ingredients may include cloves, cinnamon, scallions, nutmeg, thyme, garlic, brown sugar, ginger, and salt.
