Kefir & Peanut Butter Pancakes
Wholesome oat-and-kefir pancakes topped with warm peanut butter and fresh berries.

Ingredients
| 1 cup | 240 ml | plain flour |
| 1 cup | 240 ml | oat flour or ground oats |
| 1½ tsp | 7.5 ml | baking soda |
| pinch | salt | |
| 2 cup | 480 ml | kefir |
| 1/2 cup | 120 ml | low-fat milk |
| 1 tsp | 5 ml | vanilla |
| 1 | whole egg | |
| 2 | egg whites | |
| 3 tbsp | 45 ml | natural peanut butter |
| 1 cup | 240 ml | fresh berries |
Instructions
Makes 4-6 pancakes.
- Mix the flour, oat flour, baking soda and salt in a large bowl.
- In another bowl, mix the kefir, milk, vanilla extract and eggs well until you get a homogeneous mixture. Then add the dry mixture to the wet one; mix until you get a moist batter.
- Preheat a nonstick pan and pour in batter for one pancake. Cook for 2 minutes on each side, until the pancake is done.
- Warm the peanut butter in a microwave for 20 seconds and drizzle it over the pancakes. Sprinkle fresh berries on top and serve.
Tip: if you are a big fan of kefir, you can drizzle it over the pancakes before serving.
