
Kombu Dashi Simmered Rice (Takikomi Gohan)
A simple vegan Japanese takikomi gohan: short-grain sushi rice simmered with kombu, mirin, sake, soy sauce and sesame oil.

Ingredients
| 2 cups | 480 ml | sushi rice (short-grain rice) |
| 2½ cups | 600 ml | water |
| 1-2 pieces | dried kombu (Japanese kelp) | |
| 1 Tbsp | 15 ml | mirin |
| 1 Tbsp | 15 ml | sake |
| 2 Tbsp | 30 ml | soy sauce |
| 1 tsp | 5 ml | sesame oil |
Instructions
- Rinse the rice in water and drain.
- In a rice cooker or pot, add the rice, water (up to the 2-cup line if using a rice cooker), mirin, sake, soy sauce and sesame oil. Stir to combine. Lay the kombu on top and, if using a rice cooker, select the white rice function.
- If not using a rice cooker, bring the liquid to a boil, cover, reduce heat to low and cook 15-20 minutes until the rice has absorbed all the liquid. Serve immediately.
