Korean Drug Egg (Mayak Gyeran Side Dish)

Mayak gyeran, or 'drug eggs', are soft-boiled eggs marinated in a sweet-savory soy sauce with chili, garlic and sesame - a classic Korean banchan.

Ingredients

6eggs
1/2 cup120 mlsoy sauce
1/2 cup120 mlwater
1/4 cup60 mlhoney
2 tbsp30 mlmirin
1 tsp5 mlminced garlic
1green chili (serrano pepper)
1Korean red chili pepper
1green onion
1 tbsp15 mlsesame oil
2 tsp10 mlsesame seeds

Instructions

  1. In a pot of boiling water, boil the eggs for 5 minutes and 30 seconds, then immediately transfer them to an ice bath.
  2. Peel the eggs.
  3. Finely dice the red and green chili peppers and the green onion.
  4. In a large bowl, mix together the soy sauce, water, honey, mirin, minced garlic, green chili, red chili, green onion, sesame oil and sesame seeds to make the sauce.
  5. Place the eggs in a container, pour the marinade over them and leave to marinate for 2-3 hours, then enjoy!
