Kushiage Sauce Osaka Style
The communal dipping sauce that is technically not for double-dipping — a rich Worcestershire-based sauce with apple and onion for Osaka's kushikatsu.
Ingredients
| 1/2 cup (120ml) | Worcestershire sauce | |
| 3 tablespoons | 45 ml | ketchup |
| 1/2 | small apple, grated | |
| 1/4 | onion, grated | |
| 1 | clove garlic, grated | |
| 1 tablespoon | 15 ml | sugar |
| 1 tablespoon | 15 ml | soy sauce |
| 1/2 teaspoon | 2.5 ml | toasted sesame seeds |
Instructions
- Combine all ingredients in a small saucepan.
- Bring to a gentle simmer over medium-low heat, stirring constantly.
- Cook for 8-10 minutes until sauce thickens slightly and flavors meld.
- Cool to room temperature before serving. Store in a jar — improves overnight.
- Serve in a shallow communal bowl alongside kushikatsu.
