Quinoa and sweet potato patties

Idea based on cannellevanille.com. The listed amounts are for 1 black baking tray. For us, a double dose at minimum! Egg substitutes: 1 egg = 2 tbsp water + 1 tsp oil + 2 tsp baking powder; 1 egg = 2 tbsp corn or potato starch.

Ingredients

100 г киноа
2 супени лъжици зехтин
1 глава лук, нарязана на ситно
1 скилидка чесън, нарязана на ситно
200 г батат, настърган на едро
2 яйца - замених с горните два заместитела
2 супени лъжици овесени ядки
2 супени лъжици нахутено брашно
120 г моцарела, нарязана на дребни кубчета - не сложих за да е режимно
1 стрък пресен босилек, нарязан на ситно
1 стрък прясна мащерка, нарязана на ситно
сол и прясно смлян шарен пипер на вкус
мазнина за пържене
зелени салати и кълнове за гарнитура

Instructions

  1. Boil the quinoa in 250 ml water for 15-18 minutes or until all the water is absorbed. Cool it.
  2. Heat the olive oil in a deep pan, add the onion and garlic and saute for 3-4 minutes. Add the grated sweet potato. Season with salt and freshly ground colorful pepper. Cook for 3-4 minutes, stirring periodically. Cool it.
  3. Beat the eggs with a fork in a large bowl. Add the oats, mozzarella, basil and thyme. Mix well and add the quinoa and the sweet potato mixture. If needed, add more salt and pepper. Finally add the chickpea flour and knead everything well. The mixture will be relatively loose, but when you take a small part of it and press it in your palms it should form balls that do not fall apart. If the mixture is too crumbly, add more oats or chickpea flour. You can let it rest for a few minutes while the oats or flour absorb some of the moisture.
  4. Shape 12 balls from the mixture and press them lightly.

Option 1: In a non-stick pan heat enough fat to cover the bottom. Fry in the hot fat for 3-4 minutes on each side or until golden-brown. The patties must be flipped carefully and only after they have fried well on one side, so they do not fall apart. Once removed from the pan, place them on kitchen paper to drain the fat.

Option 2: Using a spoon, shape the patties from the mixture, spray them with the fat spray on top so they become crispy, and bake them on the top level of an oven preheated to 200C. They are ready in about 15 minutes.

Serve warm with a mix of green salads, sprouts or whatever else you like.
