Lentejas a la Mexicana (Mexican Lentils)

A Mexican-style lentil dish cooked in the pressure cooker with a blended tomato base, then finished with diced carrots, crispy bacon and fried plantain.

Ingredients

4tomatoes
1small onion
2cloves garlic
1 tsp5 mlvegetable oil, or as needed
0.75 pound340 glentils
salt
8 cup1.9 lwater
3carrots, diced
3slices cooked bacon, crumbled
1plantain, cut into rounds and fried

Instructions

For 6-Quart / 8-Quart Instant Pot. Servings: 2/4/6/8. Ready in: 35 min. Prep time: 10 min. Cook time: 10 min.

  1. Blend tomatoes, onion, and garlic in a blender until smooth. Alternately, place ingredients in a large bowl and blend using an immersion blender.
  2. Heat oil in inner steel pot of pressure cooker set to Sauté on Normal. Sauté lentils with blended tomato mixture in hot oil until fragrant, 1 to 3 minutes. Season with salt to taste and pour water into pot. Press Cancel to stop Sauté.
  3. Lock pressure cooker lid in place and set steam vent handle to Sealing. Select Pressure Cook and cook on High Pressure for 6 minutes. Move steam vent handle to Venting to quick-release pressure. When the red float falls into its original position, all pressure is released from the pot.
  4. Add carrots to pot. Lock pressure cooker lid in place again and set steam vent handle to Sealing. Select Pressure Cook and cook on High Pressure for 3 minutes. Let pressure release naturally. When the red float falls into its original position, all pressure is released from the pot.
  5. Season lentils with salt to taste. Ladle into bowls or onto a deep plate and top with crispy bacon and fried plantains.

Mealthy Tip: Skip the bacon for a vegetarian and vegan version.
