Lentil Stew with Meatballs
A pressure-cooker adaptation of BBC Good Food's sausage-and-fennel meatballs with lentils, shared by a member of the Bulgarian Instant Pot community.
Ingredients
| — | frozen meatballs (for frying) |
| — | lentils, soaked 15 minutes |
| — | fennel |
| — | vegetables |
| — | tomatoes |
| 500 ml | broth |
| — | white wine |
| 0.5 | lemon |
| — | parsley |
Instructions
Lentil stew with meatballs and fennel, adapted from this Good Food recipe with modifications: instead of sausage I used frozen meatballs for frying, I had no red wine so I used white.
- Fry the meatballs and set them aside, then braise the vegetables for about ten minutes as in the recipe.
- Then turn off Saute, add the tomatoes and the broth (I did not use 850 ml, but about 500), and the lentils that had been soaked for 15 minutes; cook on the pressure program for 10 minutes.
- After that QPR (quick pressure release); add the meatballs and cook for another 6 minutes under pressure. QPR again, add the juice of half a lemon and a little parsley.
Overall it follows the recipe. While it was cooking, the fennel smelled very strong and I had big doubts whether it would be edible, especially since everyone was waiting for me to cook dinner. But in the end it turned out to be quite a pleasant dish.
