| 1 pound | 455 g | pork loin roast, cut into three pieces |
| 1 tablespoon | 15 ml | lard, at room temperature |
| 1 cup | 240 ml | cream cheese |
| 1 tablespoon | 15 ml | flaxseed meal |
| 2 | garlic cloves, chopped | |
| 0.25 cup | 60 ml | rice vinegar |
| 0.25 cup | 60 ml | dry white wine |
| 2 tablespoon | 30 ml | tamari sauce |
| 0.5 cup | 120 ml | water |
| 2 tablespoon | 30 ml | maple syrup |

- Press the "Sauté" button and melt the lard. Once hot, cook the pork loin until no longer pink.
- Add the garlic, maple syrup, vinegar, water, wine and tamari sauce.
- Secure the lid. Choose the "Manual" mode and cook for 10 minutes at High pressure. Once cooking is complete, use a natural pressure release for 10 minutes; carefully remove the lid. Reserve the meat.
- Meanwhile, make the slurry by whisking the flaxseed meal with 2 tablespoons of cold water.
- Stir in the slurry and press the "Sauté" button again. Cook the sauce until it has thickened; fold in the cheese and stir until heated through. Bon appétit!
