
Lyutenitsa in the Instant Pot
The classic Bulgarian roasted vegetable relish (lyutenitsa) made faster and easier in the Instant Pot.

| 0.33 cup | 79 ml | oil |
| 0.5 teaspoon | 2.5 ml | black pepper |
Instructions
An eternal Bulgarian aspiration - to make lyutenitsa easier to prepare! If you make lyutenitsa in the Instant Pot, this goal is achieved - much faster and much easier!
- The first step of the Instant Pot lyutenitsa recipe is preparing the produce. Wash the vegetables well, clean them and cut them into large pieces. Put all the vegetables (without the spices) into the multicooker and set it to Pressure Cook for 10 minutes. The vegetables will be very well softened and will have released a large amount of water. Then release the steam, open the unit and drain the vegetables from the released liquid.
- Return the vegetables to the Instant Pot, add the oil and the intended spices, stir, then set the unit to Saute on the lowest setting. Since the vegetables are very soft, they stir easily and reduce in volume. After about 20 minutes, the lyutenitsa should be almost ready. All that remains is to blend the mixture to your desired consistency.
- Pour the lyutenitsa into jars, which you seal (sterilize) for about 12-15 minutes. The Instant Pot lyutenitsa recipe is complete.
