Instructions
- For the sponge, separate the egg whites from the yolks. Beat the egg whites to stiff peaks. Beat the whites well with the sugar and vanilla.
- Mix the flour with the baking powder and add to the whites. Gradually fold the beaten egg-white snow into the mixture.
- Put the batter in a tray and bake for 15 minutes. Let it cool.
- If using canned mandarins, drain and set aside ½ liter of the juice. If using fresh mandarins, squeeze a few to get ½ liter of juice.
- To either option, also add ½ liter of orange juice.
- Set aside some mandarins for decoration and arrange the rest over the cooled sponge.
- Boil the juice and dissolve the vanilla pudding in it. Let it cool.
- Whip the cream and start layering. Place a layer of the beaten pudding on the cake. Feel free to play with the arrangement of the layers.
- Decorate as desired.
