
Math Nu Shaak (Gujarati Moth Beans Sabzi)
How to make Gujarati Math sabzi — a Jain-friendly moth beans curry. From author Dhwani.

Ingredients
| 1 cup | 240 ml | Moth beans / math (yields 3 cups after soaking overnight) |
| to taste | Salt | |
| 1/2 tsp | 2.5 ml | Turmeric powder |
| 1 tbsp | 15 ml | Red chili powder |
| 1 tbsp | 15 ml | Cumin and coriander powder |
| 2 tbsp | 30 ml | Lemon juice |
| 500 to 600 ml | Water | |
| 3 tbsp | 45 ml | Oil |
| — | Chopped cilantro for garnishing |
Instructions
- Soak moth beans overnight or at least 6 hours in water.
- Drain all the water from the soaked moth beans. Heat oil in a pan. Add the soaked moth beans. Stir once. Add salt and turmeric powder. Mix well. Add water, mix, cover and let it cook for about 10 minutes or until the moth beans are tender. Stir occasionally.
- Once the moth beans are tender, add chili powder, cumin and coriander powder and mix well. Let it cook for another 2 minutes over medium heat. Add some water if needed.
- Switch off the flame and squeeze in lemon juice. Mix well.
- Math Nu Shaak is ready. Garnish with some chopped cilantro and serve with phulka, rice and Gujarati kadhi.
Total time 6 hours 20 minutes (including soaking).
