Mayak Eggs (Korean "Drug" Eggs)

Soft-boiled eggs marinated in a sweet-savory soy sauce with onion, garlic, ginger, green onion, sesame and chili - addictively good, hence the nickname.

Ingredients

6eggs
1/3 cup80 mlsoy sauce
119 mlwater
1/4yellow onion, diced
2garlic cloves, minced
0.5 tbsp7.5 mlginger, grated or minced
50 gbrown sugar (or other sweetener)
2green onions, chopped
1 tbsp15 mltoasted sesame seeds
1red chili, finely chopped (keep seeds for extra spice)

Instructions

  1. In a medium bowl, combine the soy sauce, water, onion, garlic, ginger, brown sugar, green onion, sesame seeds and chili. Stir until the sugar dissolves. 2. Place the cooked, peeled eggs into a container and pour the marinade over them. If they aren't fully submerged, rotate the eggs after about 6 hours so the marinade coats them evenly. 3. Cover and refrigerate, ideally overnight, for the best flavor. Enjoy halved or whole over warm rice, noodles, or as a savory snack. Air Fryer method for the eggs: Place eggs in the air fryer basket in a single layer and air fry at 300F (149C) for 8 minutes, then transfer immediately to an ice water bath. Peel while still in the water for easier shell removal. Boiling method for the eggs: Bring a pot of water to a gentle simmer, lower in the eggs and cook 6 1/2 minutes for soft-boiled (longer for firmer yolks), then transfer to an ice bath and peel in the water.
