
Meatballs in Tomato Sauce
A Bulgarian home cook's forgiving, from-memory version of pressure-cooked meatballs in a tomato sauce, made with rice-studded pork meatballs.

Ingredients

| 1 cup | 240 ml | rice |
| 1 | small onion (for the meatballs) | |

Instructions
I'm getting better at this. I no longer remember where I saw the recipe for meatballs in tomato sauce. Here is how it came together:
- Saute 1 large onion, then add 3 cans (400 g each) of diced tomatoes. (I can't quite recall whether I added water, but I think not.)
- Add spices and salt.
- Mix 600 g of ground pork with a cup of rice, a small onion and spices to taste, then shape into meatballs.
- Add the meatballs to the sauce, lock the lid and cook for 15 minutes on Manual.
- I waited only 5 minutes before releasing the steam, because mine were getting impatient.
The result is some very tasty, fluffy meatballs.
