
Meatballs with White Sauce
Homemade pork-and-beef meatballs cooked in the Instant Pot and served in a rich egg-and-yogurt white sauce.
Ingredients

| 1 pinch | cumin |
| 1 | bay leaf |

| 6 | egg yolks |
| 1 tub | yogurt |
| — | lemon juice |
| — | flour or starch (optional) |
Instructions
- Make the meatballs from homemade minced pork and beef, blended in a chopper with 1 onion and a carrot (use only half of the blended onion-and-carrot mix in the meatballs; put the other half directly into the Instant Pot bowl), 1 egg, a handful of rice, salt, red pepper (paprika), savory (chubritsa) and a pinch of cumin.
- Place the shaped meatballs in the Instant Pot bowl, cover with water (just enough to cover them) and add 1 bay leaf and a little fat/oil. Run the Manual program for 25 minutes + QPR (quick pressure release).
- Meanwhile, prepare the base of the white sauce: 6 egg yolks, 1 tub of yogurt and lemon juice.
- Add some of the meatball broth to this mixture, then return it to the Instant Pot bowl while stirring constantly. Season everything with salt and switch on the Saute program until it comes back to the boil. (Optionally, a little flour/starch can be added for a thicker sauce.)
