← BackMelon Ice Cream (with Cherry Liqueur)
Ingredients
| 1 pc | | large melon |
| 120 g | | sugar |
| 4 pc | | egg yolks |
| 5 tbsp | 75 ml | cherry liqueur |
| 2 tbsp | 30 ml | lemon juice |
| 400 ml | | cream |
| 150 g | | chocolate |
| 6-8 pc | | raspberries |
Instructions
- For the "Melon ice cream" recipe, cut a lid off the melon and carefully scoop out the flesh.
- Clean it of seeds and put it in a pan.
- Add the sugar and simmer over low heat until the sugar is completely absorbed by the melon.
- Mash with a fork.
- Beat the egg yolks and add them to the melon.
- Put the mixture for the "Melon ice cream" recipe over low heat to thicken, whisking constantly until you get a smooth mixture resembling a fine cream.
- Pour it into a bowl and place in the freezer.
- Take it out and pour in the liqueur and lemon juice, whisk thoroughly and combine with the cream.
- Return to the freezer for 2-3 hours in a lidded container.
- From time to time, stir the ice cream so lumps don't form.
- Serve the melon ice cream mounded in the melon, optionally garnished with grated chocolate and raspberries.
