
Mini Cheesecakes with Fruit and Salted Caramel
Individual baked mini cheesecakes on a cocoa-biscuit base, topped with fresh fruit and homemade salted caramel.
Ingredients
| 4 packs | Belvita biscuits with hazelnuts | |
| 3 tsp | 15 ml | cocoa |
| 50 g | melted butter | |
| 500 g | cream cheese "Dobrev" | |
| 1 cup | 240 ml | sugar |
| 3 | free-range eggs | |
| 200 g | raspberries, cherries, strawberries | |
| 30 g | dark chocolate | |
| 20 g | sugar (for the caramel) | |
| 2 tsp | 10 ml | water (for the caramel) |
| 20 g | butter (for the caramel) | |
| 3 tbsp | 45 ml | cream (for the caramel) |
| 1 pinch | pinch of salt (for the caramel) |
Instructions
The biscuits are ground in a food processor, then the cocoa and butter are added and it is blended again to a moist dough.
Place white paper liners in a muffin tin and fill each with 1 tablespoon of the biscuit mixture. Press well against the bottom and refrigerate.
Beat the cream cheese and sugar into a cream. Add the eggs one by one, beating with the mixer after each. Here you can add vanilla, lemon and other flavors — I wanted a pure taste.
Fill the liners to the top, tap them a few times on the table to release the air and place in an oven preheated to 160º. Baking is no more than 20 minutes. Even if they look pale, take the tray out. The time is enough to set the eggs and the cream. Remove them carefully from the tin and let them cool completely.
!!!! The baked cheesecake cools in several stages — first in the open oven, then at room temperature and finally in the fridge.
For decoration you can use whatever you have in the fridge — chocolate, strawberry jam, blueberries, half an apricot, etc. I made some with raspberry puree, mashing a handful of raspberries with a fork. The others I decorated with slices of fresh strawberries.
For the salted caramel, I melted 20 g of sugar on the stove and the moment it turned golden I added the butter, stirring constantly. Then the cream, and again we stir until homogenized. It didn't turn out completely liquid and I had a few bits of sugar, but I attribute that to adding the butter too early. Wait well for the sugar to melt and become liquid caramel before adding the butter.
