Ingredients
| 50 ml | gin |
| 15 ml | lime juice |
| 60 ml | sugar syrup |
| 30 ml | cucumber juice |
| 440 ml | milk |
| 100 ml | cinnamon syrup |
| 4 g | Espuma Cold (creative cuisine) |
Instructions
Cinnamon espuma: Mix milk, cinnamon syrup and Espuma Cold, then pass through an iSi Funnel & Sieve directly into a 0.5 l iSi Whip. Screw on 1 iSi Professional Charger and shake vigorously.
Cocktail: Put the gin, lime juice, sugar syrup and cucumber juice in a shaker with ice and shake vigorously. Pour into a cocktail glass, cover with the cinnamon espuma and decorate with a cucumber spiral.
Tip: For a 1 l iSi Whip, double the ingredients and use 2 iSi cream chargers one after the other, shaking vigorously after each. For a 0.25 l iSi Whip, halve the ingredients.
