Blackberry and Tarragon Tuile

Ingredients

250 gicing sugar
70 gflour
150 gblackberry coulis
35 glemon juice
100 gmelted butter
125 gground almonds
1 tsp5 mltarragon purée

Instructions

  1. Combine all the ingredients.
  2. Allow the batter to rest, then spread on a baking mat using a mould.
  3. Bake in the oven at 160°C for eight minutes.
  4. Shape the tuiles while they are still warm, if desired.
  5. Store in an air-tight container with silicone granules if necessary.

Serving suggestions: As part of a dessert, or as a biscuit served with coffee or tea; delicious with wild strawberries, almonds and rosewater; or in a composition with white chocolate, citrus and vanilla.
