
Cherry Vinegar
A fruity vinegar made by steeping overripe cherries in white wine and sherry vinegar, a nice "Waste to Taste" recipe.

Ingredients
| 500 g | cherries (overripe) |
| 350 ml | white wine vinegar |
| 350 ml | sherry vinegar |
Instructions
- Wash the cherries well and cut them in half.
- Remove the pits and cover with the two types of vinegar.
- Seal well and leave in a cool, dark place for at least five days, stirring occasionally.
- Strain the vinegar and discard the cherries.
- Store the vinegar in sterilised, well-sealed bottles in a cool, dark place.
Serving suggestions: in dressings, for example with almond oil; as a flavour enhancer in sauces and vegetable dishes; vary by adding fresh herbs such as dill, tarragon or lemon thyme.
