Cherry Vinegar

A fruity vinegar made by steeping overripe cherries in white wine and sherry vinegar, a nice "Waste to Taste" recipe.

Ingredients

500 gcherries (overripe)
350 mlwhite wine vinegar
350 mlsherry vinegar

Instructions

  1. Wash the cherries well and cut them in half.
  2. Remove the pits and cover with the two types of vinegar.
  3. Seal well and leave in a cool, dark place for at least five days, stirring occasionally.
  4. Strain the vinegar and discard the cherries.
  5. Store the vinegar in sterilised, well-sealed bottles in a cool, dark place.

Serving suggestions: in dressings, for example with almond oil; as a flavour enhancer in sauces and vegetable dishes; vary by adding fresh herbs such as dill, tarragon or lemon thyme.
