Homemade edible popping pearls made by dripping a sodium alginate mixture into a calcium chloride bath, so the pearls set solid outside while staying liquid inside.

Ingredients

1 tsp5 mlSodium alginate
4 cups960 mlWater
1 tsp5 mlCalcium chloride

Instructions

  1. Add the sodium alginate to 2 cups of water and mix with an immersion blender until the mixture becomes thick.
  2. Let the mixture sit for 3-4 hours, or microwave it briefly and let it cool completely.
  3. In a separate bowl, stir the calcium chloride into 2 cups of water until dissolved.
  4. Add food coloring and the sodium alginate mixture to a plastic squeeze bottle. Use different colors for variety.
  5. Drip the mixture into the calcium chloride water one drop at a time to form the popping pearls — they will be liquid inside and solid outside.
  6. Strain the pearls out of the water and rinse lightly in fresh water to remove excess calcium chloride.
