
Iota Carrageenan

Instructions
- Dissolves in water at around 85°C; the water needs to contain calcium.
- Works best combined with starch; only a very small amount is needed (about 0.01%).
- Produces exceptionally clear gels (can set water without clouding it).
- Suitable for freezing products.
