Kappa Carrageenan

Reference note on kappa carrageenan, a firm gelling agent, and how to dissolve it.

Ingredients

Instructions

  • Dissolves in water at around 79–85°C; the water needs to contain potassium (not calcium, like iota).
  • Slightly clouds the gel. Not suitable for freezing – if frozen, water starts separating from the product.
  • Only a very small amount is needed, around 0.02–2%.
  • Works best combined with locust bean gum.
