
Langoustine Powder
A savoury flavour-boosting powder made from roasted langoustine shells and oil bound with maltodextrin.

Ingredients
| — | heads and tails of langoustines |
| 200 ml | rapeseed oil |
| 50 g | maltodextrin |
| as needed | salt |
Instructions
- Place the langoustine shells on a roasting tray and roast until nicely caramelised, about 25 minutes; the shells will be hard and strongly aromatic.
- Cover the shells with the rapeseed oil and return to the oven for 15 minutes.
- Remove the shells from the oven and place in a food processor; blend for 30 seconds.
- Strain through muslin and set aside to cool.
- Combine 25 ml of the langoustine oil with the maltodextrin and mix until a powder forms.
- Season to taste with a little sea salt.
Serving suggestions: with rhubarb, langoustine and sea lettuce; with pork belly, green legumes and celery; with turbot, fennel and celery.
