Sesame Tuiles with Citrus Fruit

Paper-thin, buttery sesame biscuits with orange juice and almonds, created by Hidde de Brabander; a versatile garnish for sweet or savoury dishes.

Ingredients

120 gbutter
100 galmonds
100 gorange juice
200 gicing sugar
60 gflour
125 gblack and white sesame seeds
as neededcitrus zest

Instructions

  1. Melt the butter without letting it become too hot.
  2. Finely chop the almonds in a food processor and mix all the ingredients together in a bowl with a spatula.
  3. Set aside to firm up in the refrigerator.
  4. Use a small ice cream scoop to scoop mounds of the mixture onto a lined baking sheet, leaving space between them as they spread while baking.
  5. Bake at 190°C for 10 minutes.
  6. If you wish to shape the tuiles, do so immediately after removing them from the oven, while still pliable.
  7. Store in an air-tight container with silicone granules to keep them crunchy.

Serving suggestions: As a thin garnish or friandise; in a composition with ginger, white chocolate and vanilla; or with yuzu, almond and ricotta.
