Ingredients
| 3 | large egg whites | |
| 1/4 tsp | 1.3 ml | cream of tartar |
| 1/2 tsp | 2.5 ml | vanilla |
| 3/4 cup | 180 ml | granulated sugar |
| 2 tbsp | 30 ml | ground freeze-dried strawberries |
| 1 drop | burgundy gel food colour (optional) |
Instructions
- Preheat the oven to 100°C (90°C fan). Line a baking sheet with parchment paper.
- Place the egg whites in a stand mixer and whisk with the whisk attachment until foamy.
- Add the cream of tartar and vanilla.
- With the mixer on medium-high, slowly add the sugar, about 1 tablespoon at a time, and whisk to stiff, glossy peaks.
- Fold in the ground freeze-dried strawberries and whisk on medium-high just until incorporated.
- Optional: dip a toothpick in gel food colour and run it along the inside of a piping bag fitted with a #1A tip to create stripes.
- Transfer the meringue to the piping bag and pipe kisses about 1 inch apart on the prepared sheet — they expand slightly while baking.
- Bake for 60–90 minutes, until firm to the touch.
- Remove from the oven and let cool completely before serving.
