Mango-juice spheres formed by dropping the fruit mixture into a calcium bath, following the classic reverse spherification method.

Ingredients
| 5 g | Calcium lactate |
| 500 ml | Water |
| 2.5 g | Sodium alginate |
| 250 ml | Mango juice |
Instructions
- Prepare the calcium bath by whisking the calcium lactate into the water; set aside once fully dissolved.
- Using an immersion blender, mix the sodium alginate into half of the mango juice until well hydrated.
- Add the remaining mango juice and incorporate with a whisk.
- Using a teaspoon, scoop up the mango mixture and gently pour it into the calcium bath; leave the sphere to "cook" for 1 minute, turning it over halfway through.
- Gently remove the sphere with a slotted spoon and transfer to a clean water bath to rinse off excess calcium. Serve immediately.
