
Mormon potatoes from Food Network
A cheesy baked potato casserole (Mormon / funeral potatoes) from Food Network.
Ingredients

| 1 килограм | grated potatoes, pre-boiled until firm |
| 1 | medium onion, finely chopped |
| 1/4 чаша | flour |
| 1 чаша | fresh milk |
| 2 чаши | chicken broth |
| — | salt and freshly ground black pepper to taste |
| 1 1/2 чаши | grated Monterey Jack (or cheddar or plain kashkaval) |
| 1 чаша | sour cream |
| 1/2 чаша | coarsely grated mature cheddar (can be replaced with kashkaval or other yellow cheese to taste) |
| 2 чаши | chips (crisps) |
| 1/4 чаша | grated Parmesan |
Instructions
Note: 1 cup = 200 ml
- Preheat the oven to 180 degrees.
- Grease a 23 cm x 33 cm baking dish with 1 tbsp of the butter.
- Heat a large pan over medium heat, melt 6 tbsp of the butter, add the onion and sweat it, stirring occasionally, until softened (about 3-4 min). Sprinkle the flour over the onion and stir until absorbed. Stir for about a minute or two until the flour is cooked, but don't let it color. Pour in the milk and stir. Make sure no lumps remain. Add the broth and stir again. Let the mixture come to a gentle boil (but not a rolling boil) and keep it like that for about 3 min until it thickens. Season with salt and pepper to taste. Turn off the heat and stir in the Monterey Jack, sour cream and cheddar. Add the grated potatoes and stir everything well. Pour into the baking dish.
- Melt the remaining 1 tbsp of butter in a small saucepan. Put the chips and parmesan into a bowl, crush the chips, pour in the butter and stir. Spread over the mixture in the dish.
- Cover with aluminum foil and bake for about 60 min. Then remove the foil and continue baking until golden (about 15 min). Let it rest before serving.
