2 cups480 mlroughly chopped tomatoes
0.5 cup120 mlroughly chopped onion

1 tbsp15 mlkitchen king masala

1 tsp5 mlsugar (as per sourness of tomatoes)
1 tsp5 mlkasuri methi
3 tbsp45 mloil (for paneer and gravy)
1 tsp5 mlcumin seeds

Matar Paneer on Stove Top

  1. Heat 1 tbsp oil in a pan. Add paneer cubes and saute from both sides until golden brown. Keep aside.
  2. Heat 2 tbsp oil in another pan. Add cumin seeds. When they crackle, add ginger, garlic, cashews, onion and tomatoes. Saute 10 minutes over medium heat or until everything is fully cooked. Let it cool down.
  3. Transfer the onion-tomato mixture to a blender. Grind and sieve very well (you can also use an immersion blender).
  4. Place the gravy in a pan and switch on the flame. Add chili powder, turmeric, kitchen king masala, kasuri methi and sugar. Mix well. Cook the gravy 5 minutes over medium heat.
  5. Add paneer cubes and green peas to the gravy and cook again 8 to 10 minutes over medium heat.
  6. Matar paneer is ready. Serve with roti, plain paratha, naan, kulcha or even rice.

Matar Paneer in Instant Pot

  1. Heat 1 tbsp oil in a pan. Add paneer cubes and saute from both sides until golden brown. Keep aside.
  2. Turn on saute mode. Heat 2 tbsp oil in the Instant Pot.
  3. Add cumin seeds. When they crackle, add ginger, garlic, cashews, onion and tomatoes. Saute for a minute.
  4. Cover the Instant Pot, press the manual/pressure button. Set 5 minutes on high pressure, vent valve in sealing position.
  5. Let the pressure release naturally. Open the lid.
  6. Transfer the onion-tomato mixture to a blender. Grind and sieve very well (or use an immersion blender).
  7. Place the gravy back in the inner pot and turn on saute mode. Add salt, chili powder, turmeric, kitchen king masala, kasuri methi and sugar. Stir well.
  8. Add paneer cubes and green peas and mix well. Cook the gravy 2 minutes.
  9. Matar paneer is ready. Serve with roti, plain paratha, naan, kulcha or even rice.

Notes

  • Add some water while grinding the gravy if needed.
  • To make this dish vegan, sub paneer with firm tofu.
  • You can use canned tomato puree instead of fresh tomatoes.
  • Adjust the sourness by adding sugar or any other sweetener.
  • You can find kitchen king masala in any Indian grocery store; if you can't find it, use garam masala.
  • You can skip the shallow-frying of the paneer and add it directly to the gravy.
  • You can make this gravy in a traditional Indian pressure cooker too: follow all the gravy steps, take 2 whistles, then follow the next steps.
