
Nam Tok Neua, Thai Waterfall Beef Salad
A classic Thai salad combining seared beef with a bright lime-and-chili dressing, fresh herbs and toasted rice powder. Can be served as a shared side or a full meal.

Ingredients

| 2 cloves | Garlic, finely minced | |
| 8 | Red shallots, thinly sliced | |
| 1.5 tbsp | 23 ml | Palm sugar |
| 1 tbsp | 15 ml | Water |
| 1 tbsp | 15 ml | Red chili flakes |
| 1.5 tbsp | 23 ml | Fish sauce |
| 1.5 tbsp | 23 ml | Lime juice |
| 1/4 cup | 60 ml | Coriander leaf |
| 1/4 cup | 60 ml | Sawtooth coriander |
| 1/4 cup | 60 ml | Mint leaf |
| 3 stalks | Spring onion | |
| 1 cup | 240 ml | Cherry tomatoes |
| 1/2 | Japanese cucumber | |

Instructions
- Make your toasted rice powder: brown the sticky rice in a dry pan over medium-low heat for 4-6 minutes, until golden brown. Remove from heat and grind into a coarse powder with a mortar and pestle, then set aside.
- Pat the surface of the steak dry, then season both sides evenly with salt and pepper.
- Preheat a heavy-bottomed frying pan on medium heat for 3-4 minutes. Oil the pan with 2 tablespoons of cooking oil, then sear the steak.
- Flip after a deep crust has formed, approximately 3 minutes on each side, aiming for medium doneness. Set the beef aside to rest in a warm place for 5 minutes.
- Reduce the heat to low, cook the minced garlic for 3 minutes until browned, then remove from heat and add the sliced shallots to the pan and let sit for 2 minutes.
- Empty the contents of the frying pan into a large mixing bowl. Add the palm sugar, water, chili flakes, fish sauce and lime juice and combine well to make a dressing.
- Slice the steak into thin strips, then combine in the mixing bowl with roughly chopped coriander, sawtooth coriander, mint, and sliced spring onions, cherry tomatoes and Japanese cucumber.
- Toss to coat with the dressing, then dust generously with the toasted rice powder. Add additional chilies if more spice is desired.
