
Nasi Goreng
Meaning 'Fried Rice' in Indonesian, Nasi Goreng is made with a pungent spice paste and always served with fried eggs, sliced cucumber and tomato, no matter where you eat it.

Ingredients

| 2-3 | Bird's-eye chillies (2-3, depending on how hot you like it) | |

| 1 tbsp | 15 ml | Corn oil |
| 2 slices | Chicken tikka, sliced | |
| 2 | Eggs, beaten | |
| 2 tbsp | 30 ml | Kecap manis |
| 1 tbsp | 15 ml | Oyster sauce |
| 1/2 tsp | 2.5 ml | Dark soya sauce |
| 3 pieces | Shredded chicken | |

Instructions
- To make the Indonesian chilli paste, put all the paste ingredients into a food processor with 1 tbsp cold water and blend until smooth. Heat 1 bowl of oil in a pan, add the paste and cook gently for 10 minutes until the chilli paste is properly cooked.
- Heat 2 tbsp vegetable oil in a wok or frying pan until hot. Marinate the chicken tikka with chilli paste (1 tsp), egg (10 gr), corn flour (3 tbsp) and salt, then fry the chicken pieces until well browned and crispy.
- Reduce the heat to low, add the remaining tbsp of oil and 1 tbsp of chilli paste, the shredded chicken and diced boiled shrimp. Tip in the rice, turn up the heat and cook for 3 minutes.
- Push the rice up the sides of the pan and pour the beaten egg into the middle. Once the egg has set, chop it into pieces in the pan and mix through the rice.
- Add the kecap manis, oyster sauce, dark soya sauce and a little seasoning, and cook for 2-3 minutes or until piping hot.
- To serve, scatter over the spring onions and crispy shallots and serve with a fried egg on top, a fried shrimp cracker, and sliced cucumber and tomato on the side.
