Nasi Goreng (Indonesian)

Indonesian: nasi = cooked rice, goreng = fried. Those who don't like it can skip the peanuts and coconut — even without them the flavour is fantastic.

Ingredients

250 gboiled chicken meat

350 gcooked cold rice (basmati or jasmine)

4 с.л.oil
2-3 ч.л.turmeric

Instructions

The ingredients are processed in the order given — this applies especially to the two kinds of soy sauce.

  1. Beat the eggs with the soy sauce and fry them in 1 tbsp oil into an omelette, which is removed and cut into strips.
  2. Cut the chicken into strips, the green onion into rounds. Slice the onion into rings, mince the garlic. Peel and finely chop the ginger. Deseed the chili pepper and cut it lengthwise into strips.
  3. Put the peanuts and coconut in a wok or pan and toast them without fat. Remove and set aside.
  4. Heat 3 tbsp oil and add the onion, garlic, ginger and chili pepper. Fry for about 5-10 minutes until the onion turns golden, stirring constantly. Add the cooked rice and stir for another 3-4 minutes.
  5. Add the chicken, green onion, shrimp, light soy sauce, lemon juice and sugar, and stir until everything is combined and well heated. Add the omelette strips, season, and arrange on a warm large plate. Sprinkle with the peanuts and toasted coconut.
  6. Those who don't like it can skip the peanuts and coconut — the flavour is fantastic even without them.
