Instructions

Nihari is a one-pot meat stew cooked with a variety of spices. The dish is flavorful, delicious and rich with vitamins and minerals.
To make the Nihari masala: Blend all the spices (whole star anise, whole long peppers, coriander seeds, cumin seeds, fennel seeds, whole black peppers, whole cloves, cardamom seeds, nigella seeds, cinnamon stick, strands mace).
Method:
- Heat a pressure cooker and add meat.
- Add salt, garlic, ginger, and oil.
- Add the Nihari masala and ground spices.
- Coat the meat and bones with the spices.
- Add black cardamom, nutmeg and bay leaf. Mix.
- Add water.
- Cover and cook 1 hour on medium heat.
- Carefully let out air and remove the lid.
- Add flour-water mixture, lemon juice, fried onions, and chilies.
- Cook uncovered for 15 minutes.
- Serve garnished with ginger slices and coriander.
