BackNo-bake vanilla cheesecake

No-bake vanilla cheesecake

For a pan measuring 18-20 cm.

Ingredients

200 гbiscuits (e.g. Everest or Zakuska)
60 гmelted butter
500 гmascarpone (or preferred cream cheese)
100 гsugar
2 с.л.honey

400 млfresh milk

20 гDr. Oetker gelatine (2 sachets)
100 млanimal (heavy) cream, or fresh milk
200 млanimal (heavy) cream
500 гstrawberries, or preferred seasonal fruit (for garnish)
1 с.л.icing sugar - for dusting, optional

Instructions

  1. Grind the biscuits in a blender or crush them with a rolling pin in a bag into coarse crumbs. Add the melted butter and stir into a sticky dough.
  2. Place an adjustable cake ring on a tray or cake plate, pour in the mixture and press with a coffee-dosing spoon (the bottom of a glass or with your fingers) until you form a firm base.
  3. Line the wall of the ring with an acetate strip or a strip of baking paper and leave the biscuit base in the fridge to set.
  4. Stir the cream cheese, sugar, honey and the bourbon vanilla sugar into a smooth cream.
  5. Whip the Oetker Ole cream with the milk according to the instructions on the package.
  6. Whip 200 ml of the animal (heavy) cream to soft peaks.
  7. Soak the gelatine in the cold water for 5-10 minutes.
  8. Bring the remaining 100 ml of animal cream to a boil, remove from heat, add the soaked gelatine and stir until fully dissolved, then leave to cool slightly.
  9. Add the melted gelatine, stirring constantly, to the whipped Ole cream.
  10. Add the Ole cream in portions to the cream-cheese mixture and stir into a smooth cream.
  11. Gradually add the whipped cream to the mixture and stir with a silicone spatula or wooden spoon from the bottom upwards.
  12. Pour the cream over the biscuit base, level it, cover with plastic wrap and leave for at least 4 hours in the fridge — or if in a hurry, 30-40 minutes in the freezer and then at least 2 hours in the fridge.
  13. Release the finished cheesecake from the ring, remove the acetate strip (or baking paper) and decorate with fresh strawberries, optionally dusting with icing sugar through a sieve.
  14. Serve chilled, garnished with fresh strawberries or your preferred seasonal fruit.
