Banana Pancakes (with oat flour)

Ingredients
| 3 | small or ripe bananas (270 g), mashed | |
| 2 tbsp | 30 ml | coconut oil or butter, melted |
| 2 tsp | 10 ml | lemon juice |
| 2 tsp | 10 ml | vanilla |
| 2 | eggs | |
| 1 cup | 240 ml | oat flour (gluten-free if desired) - plus at least another 1/3 flour! |
| 1/2 tsp | 2.5 ml | baking soda |
| 1/2 tsp | 2.5 ml | salt |
| 1 tsp | 5 ml | ground cinnamon |
| 1/4 tsp | 1.3 ml | grated nutmeg |
Instructions
Mix the wet ingredients with the mashed bananas in a large bowl and stir well. Combine the remaining ingredients in a bowl. Pour the dry ingredients over the wet ones and stir; some lumps may remain in the mixture. Set the mixture aside for 10 minutes.
Heat a nonstick pan on temperature setting 4. Pour 1/4 cup of the batter into the pan and cook for a few minutes, until bubbles form around the edges of the pancake. Flip it and cook for another 90 seconds, until it turns golden.
Tip: Serve with sliced pieces of banana and chocolate chips on top.
