Pancakes with Oats and Cottage Cheese
Ingredients
| 1/2 cup | 120 ml | oat flour |
| 1/2 | medium banana | |
| 1/2 tsp | 2.5 ml | vanilla extract |
| 1 tsp | 5 ml | baking powder |
| 1/2 tsp | 2.5 ml | cinnamon |
| 2 | large egg whites (or 1 egg) | |
| 1/4 cup | 60 ml | fat-free (low-fat) cottage cheese |
| 1-2 tbsp | 15–30 ml | unsweetened vanilla-almond milk |
Instructions
For 3-4 portions.
The batter is extremely easy to prepare: blend the ingredients in a blender until you get a smooth mixture; this takes about 30 seconds.
- Heat a non-stick pan over medium-high temperature. Grease the surface of the pan with coconut oil or another oil of your choice.
- Pour 1/4 cup of the batter into the pan and cook for a few minutes, until bubbles form around the edges of the pancake. Flip it and cook another 90 seconds, until it takes on a golden colour.
Tip: You can place pieces of banana on top of the pancakes, but if you want an extra topping, try fresh berries, peanut butter or, if you want something sweet, pieces of chocolate.
