Oatmeal and Apple Pancakes

Ingredients
| 1 1/4 cup | 300 ml | oat flour (or oats ground in a food processor or coffee grinder) |
| 1 | large egg | |
| 1 tsp | 5 ml | baking powder |
| 1 tsp | 5 ml | baking soda |
| 1/2 tsp | 2.5 ml | salt |
| 1 tbsp | 15 ml | honey |
| 1 cup | 240 ml | almond milk |
| 2 tbsp | 30 ml | yogurt |
| 1 tsp | 5 ml | cinnamon |
| 1 | apple, cut into thin slices |
Instructions
Ingredients for 7-8 pancakes.
- Mix the oat flour, baking powder, baking soda and salt in a large bowl. Add all the remaining ingredients except the apple and stir well. Pour all the ingredients into a large bowl and mix them together.
- Heat a non-stick pan over medium-high heat.
- Grease the surface of the pan with coconut oil or another oil of your choice.
- Pour 1/4 cup of the batter into the pan and cook for a few minutes, until bubbles form around the edges of the pancake. Place a few apple slices on top. Cook for another 2 minutes and then flip the pancake.
- Cook for another 3 minutes, until the pancake is done.
Tip: Serve the pancakes warm, sprinkled with honey and topped with caramelized apples.
