Onion Soup
Easy. Serves 4. Time: 1 h 30 min.
Ingredients
| 1.2 kg | white onion | |
| 1.2 l | vegetable broth | |
| 120 g | German butter Pilos | |
| 80 g | flour | |
| 100 ml | ouzo | |
| 2 tbsp | 30 ml | honey |
| 4 | slices baguette | |
| 50 g | kashkaval | |
| 100 ml | oil | |
| 1 | clove garlic | |
| 0.25 bunch | parsley | |

| — | black pepper |
Instructions
Peel the onions and cut them into thin half-moons. Heat the oil in a deep pot and stew the onion until fully softened (about 25 minutes), adding the butter gradually, in 3 stages during cooking. Season with salt and black pepper. Once the onion turns golden, add the flour too and stir to obtain a homogeneous mixture. Then add the honey and the ouzo, pour in the vegetable broth and leave on the stove to simmer for about 40 minutes. Once the soup is ready, rub the baguette slices with garlic, spread with butter and place a piece of kashkaval on top. Toast them in the oven until golden. Serve the soup in a deep bowl, placing the cheese bread in the middle, and sprinkle with finely chopped parsley. From https://gotvi.lidl.bg/recipe/115
