
Orange-Maple Sweet Potatoes

| 4 pounds | 1.8 kg | sweet potato, peeled and cut into 1-inch thick slices |
| 0.5 cup | 120 ml | fresh orange juice |
| 0.25 cup | 60 ml | unsalted butter, melted |
| 3 tablespoons | 45 ml | maple syrup |
| 1 teaspoon | 5 ml | kosher salt |
| 2 teaspoons | 10 ml | cornstarch |
| 1 tablespoon | 15 ml | cold water |
Instructions

- Heat a skillet over medium-high heat. Cook bacon in the hot skillet until crisp, 4 to 6 minutes per side; drain on a plate lined with paper towel. Crumble bacon.
- Place sweet potatoes in the steel pot of a pressure cooker.
- Stir orange juice, butter, maple syrup, and salt together in a bowl; pour over sweet potatoes and stir to coat.
- Seal lid on the pressure cooker, turn steam vent to Sealing, and cook on High Pressure for 6 minutes. Immediately turn steam vent to Venting to Quick Release pressure.
- Transfer potatoes to a serving dish using a slotted spoon.
- Press Cancel on the pressure cooker and select Sauté.
- Stir cornstarch into cold water in a small bowl to dissolve; add to the liquid remaining in the pressure cooker. Simmer sauce, stirring frequently with a whisk, until smooth and thickened, about 2 minutes.
- Spoon sauce over potatoes and top with bacon.
Mealthy Tip: Combining cornstarch and cold water is called making a slurry. It is used to thicken a sauce. It is important to make the slurry with cold liquid, and then add the slurry to the warm simmering sauce.
