Orange-Maple Sweet Potatoes

Ingredients

3 slicesbacon
4 pounds1.8 kgsweet potato, peeled and cut into 1-inch thick slices
0.5 cup120 mlfresh orange juice
0.25 cup60 mlunsalted butter, melted
3 tablespoons45 mlmaple syrup
1 teaspoon5 mlkosher salt
2 teaspoons10 mlcornstarch
1 tablespoon15 mlcold water

Instructions

Ready in: 30 min. Prep time: 14 min. Cook time: 16 min. Servings: 2, 4, 6, 8 or 10 (6 Quart / 8 Quart). For best results the source recommends using a Mealthy Multipot.

  1. Heat a skillet over medium-high heat. Cook bacon in the hot skillet until crisp, 4 to 6 minutes per side; drain on a plate lined with paper towel. Crumble bacon.
  2. Place sweet potatoes in the steel pot of a pressure cooker.
  3. Stir orange juice, butter, maple syrup, and salt together in a bowl; pour over sweet potatoes and stir to coat.
  4. Seal lid on the pressure cooker, turn steam vent to Sealing, and cook on High Pressure for 6 minutes. Immediately turn steam vent to Venting to Quick Release pressure.
  5. Transfer potatoes to a serving dish using a slotted spoon.
  6. Press Cancel on the pressure cooker and select Sauté.
  7. Stir cornstarch into cold water in a small bowl to dissolve; add to the liquid remaining in the pressure cooker. Simmer sauce, stirring frequently with a whisk, until smooth and thickened, about 2 minutes.
  8. Spoon sauce over potatoes and top with bacon.

Mealthy Tip: Combining cornstarch and cold water is called making a slurry. It is used to thicken a sauce. It is important to make the slurry with cold liquid, and then add the slurry to the warm simmering sauce.
