Baked Pangasius Fillets with Grapefruit Sauce
Baked pangasius fish fillets served with a fresh grapefruit sauce and sauteed vegetables.

Instructions
Reconstructed classic method: 1. Preheat the oven to 200 degrees. Pat the pangasius fillets dry, season with salt and pepper and drizzle with a little olive oil. Arrange on a baking tray lined with baking paper. 2. Bake for about 15-20 minutes, until the fish is opaque and flakes easily. 3. For the sauce, peel a grapefruit and separate the segments, working over a bowl to catch the juice. Warm the grapefruit juice in a pan with a little butter, a pinch of sugar, salt and pepper, and let it reduce slightly, then add the grapefruit segments to warm through. 4. Meanwhile saute the sliced peppers and zucchini in a little oil until just tender. 5. Serve the baked pangasius fillets topped with the grapefruit sauce, alongside the sauteed vegetables.
