Pea Stew with Bananas
An exotic plant-based stew of dried peas and whole bananas, fried with onion in palm oil and served with boiled rice.

Ingredients
| 2 ч.ч./cups | dried peas (soaked) |
| 4 | bananas |
| 1/2 ч.л./tsp | salt |
| 2 с.л./tbsp | palm oil |
| 1 | small onion (thinly sliced) |
Instructions
- Boil the peas in enough water to cover them (about 1 1/2 hours), until soft.
- Peel the bananas and place them whole over the peas without stirring. Cook for another 10 minutes until the bananas soften, adding more water if needed to keep the peas from sticking.
- Meanwhile, heat the palm oil in a large pan. Fry the onion until golden brown.
- Using a slotted spoon, add the bananas and peas to the onion. Sprinkle with salt and keep frying, stirring constantly but gently, until they absorb the oil but do not turn completely mushy.
- Serve warm with a side of boiled rice.
