
Pickled Apple Slices
Equipment: Digital scale, Mandoline, Chamber vacuum sealer (optional), Sous vide bag(s) (optional). Timing: 10 min. Yield: About 300 g of pickled apple slices.
Ingredients

| 400 g | White wine vinegar |
| 80 g | Sugar |
| 20 g | Salt |
| 4 g | Black pepper, whole |
| 4 g | Coriander seed, whole |
| 2 | Apples, Granny Smith |
Instructions

Prepare aromatic pickling liquid. Combine water, vinegar, sugar, salt, pepper, and coriander. Make sure that the sugar and salt are completely dissolved. TIP: Heat half of the water to a simmer, and stir the ingredients in this water until the salt and sugar are fully dissolved. (The liquid should be clear.) Add the other half of the water in the form of ice to quickly chill the brine.

Core and thinly slice apples. Core the apples, cut them in half lengthwise, and then slice them 0.08 in (2 mm) thick with a mandoline.

Pickle. Pour the pickling liquid over apple slices and let infuse for at least 60 minutes.

Alternative: Vacuum-infuse. For faster results, use this technique for vacuum-infused pickling to pickle the apple slices instantly.
