BackPineapple Ginger Juice (West African)

Pineapple Ginger Juice (West African)

West African pineapple and ginger juice sweetened with a simple syrup and served over ice.

Ingredients

2 cups480 mlwater (for simple syrup)
1 cup240 mlgranulated sugar
4 ounce115 gginger, chopped
7 cups1.7 lhot water
1-2 cups240–480 mlfresh pineapple juice
1freshly squeezed lime, juiced

Instructions

  1. In a large bowl, mix ginger and hot water. Let it sit for about an hour or more. Using a cheesecloth or fine sieve, drain the water and set aside.
  2. In a medium bowl (pot) bring 2 cups water and the sugar to a boil. Simmer until the sugar has dissolved. Allow to cool.
  3. Combine ginger water, pineapple juice and simple syrup; stir and serve over ice.

Tips & Notes:

  1. The author used fresh pineapple, but when pressed for time store-bought pineapple juice works just fine.
  2. If you live in an area where pineapples are really sweet, then reduce the amount of sugar or completely eliminate it.
  3. You can also add rum to it.
