
Pollo Al Vino Blanco (Chicken in White Wine)
White wine chicken is a quick and easy recipe for celebrations or any time of the year and is a sophisticated dish without making great efforts. It is ready in less than 30 minutes! Accompany this dish with toasted bun and butter.

Ingredients

| 2 tablespoons | 30 ml | vegetable oil |
| 8 pieces | boneless chicken (thigh, leg, and/or breast) | |
| 4 | onions, sliced | |
| 5 cups | 1.2 l | white wine |
| 3 cups | 720 ml | chicken consomme |
| — | salt | |
| 6 | large potatoes, cut into thick slices |

- Heat butter and oil in inner steel pot of pressure cooker set to Saute on High. Saute chicken in hot butter-oil until browned, 3 to 4 minutes per side. Transfer chicken to a plate.
- Saute onions in inner steel pot of pressure cooker until softened and translucent, 4 to 7 minutes. Pour white wine into pot with onions, scraping any browned bits off the bottom of the pot with a spatula or wooden spoon. Add chicken consomme and season with salt to taste. Press Cancel to stop Saute.
- Add sliced potatoes and browned chicken to pot.
- Lock pressure cooker lid in place and set steam vent handle to Sealing. Select Poultry and cook on High Pressure for 9 minutes. Move steam vent handle to Venting to quick-release pressure. When the red float falls into its original position, all pressure is released from the pot.
- Season chicken with salt to taste. Spoon chicken, potatoes, and onions into deep plates or bowls and ladle white wine broth over the top.
Mealthy Tip: You can buy pre-made chicken consomme or you can make it using consomme powder and water. You can also use chicken broth or stock in place of the consomme.
