Pork Tenderloin with Kiwi Sauce

Adapted from the Larousse Culinary Bible. You can also cook the meat by my favourite recipe from the blog Fkusno - it turns out very tender.

Ingredients

450 gpork tenderloin
2small onions
6kiwis
30 gbutter
50-100 mlliquid whipping cream
salt and pepper

Instructions

  1. Finely chop the onion and 5 of the kiwis. Place the onion in a small saucepan with 15 g of the butter. Cook over low heat for 3 minutes. Add the kiwis to the onion and let it simmer for 15 minutes. Add the liquid cream and stir. You can serve the sauce as is or blend it smooth.
  2. Cut the tenderloin into 3 equal pieces, which are lightly pressed and flattened by hand (do not pound them!) to make steaks about 1-1.5 cm thick. Season with salt and pepper and sear over high heat with 15 g butter for 8 minutes on each side.
  3. Cut the remaining kiwi into rounds.
  4. Serve the tenderloin with a little of the sauce and a few slices of kiwi. Sprinkle with freshly ground black pepper. I recommend seasoning with a little freshly squeezed lemon juice.
