Potato Nests

Ingredients

2potatoes
1egg
thyme
parsley
salt and black pepper to taste
12quail eggs (filling)
250 гspinach
1fresh garlic stalk
1fresh onion stalk
1 с.л.butter
100 гblue cheese
1egg
2 с.л.sour cream

Instructions

  1. Grate the potatoes into thin straws with the new Moulinex - Fresh Express. Cover them with salted water and leave for 10 minutes so the starch comes out. Then wash them well with cold water and drain in a strainer. Finally pat them dry with a towel.
  2. Mix the potatoes with the remaining products (for the nests). Place some of the mixture into the wells of a muffin baking tray that has been greased with butter and dusted with a little breadcrumbs. Spread it over the bottom and the walls. Do not try to make it even — it is more striking if the nests are "shaggy". Bake the nests in an oven heated to 200 degrees until lightly golden.
  3. Chop the spinach, onion and garlic. Braise them in the butter. After it cools, add the egg and the sour cream. Season with salt and pepper. Finally add the crumbled cheese. Fill the baked nests and make a slight indentation in the middle. Crack one egg into each and bake until the egg white sets.
