Potatoes with Curry
Curry-coated roasted potatoes served with a honey-mustard mayonnaise dip.

Ingredients
| 1 kg | potatoes | |
| 25 g | butter, melted | |
| 1 tbsp | 15 ml | curry |
| 1 tbsp | 15 ml | mayonnaise (for the sauce) |
| 1 tbsp | 15 ml | Dijon mustard |
| 1 tbsp | 15 ml | liquid honey |
Instructions
Prep 10 min. Cook 45 min. Total 55 min. Serves 8-10.
- Cut each potato lengthwise into 8 pieces.
- Put the potatoes in a pot and cover with cold water, just enough to cover them.
- Boil the potatoes for 5 minutes after the water comes to a boil, then remove from the heat.
- In a large bowl mix the melted butter and the curry.
- Toss the drained potatoes well in this mixture, then place the potatoes in a baking tray.
- Bake in a preheated oven at 200°C for about 20-25 minutes, turning regularly.
- To make the sauce, beat the mayonnaise, mustard and honey well in a blender or with a fork. Season with salt if desired and refrigerate for an hour to chill.
